Rosé is thirst quenching, romantic, enticing and totally essential for an aperitif at dusk.
Neudorf Rosé (made from Pinot Noir) reminds me of crushed coral and smells of roses and lychee. The texture is creamy and mouth filling, the finish refreshing. Overall, the wine is rich, velvety and complete.
Forget perceptions of the rosés you drank as a student. The wines of the 21st century are elegant – designed to be enjoyed chilled, al fresco.
We find them perfect for Christmas ham, with a side of salmon,
and they are the only wine we drink with sashimi.

Technical
Pinot Noir grapes from Kina were hand harvested for the Rose at 23.9 Brix, 3.61pH and 6gL TA. The fruit was destemmed and soaked overnight prior to pressing. Smaller portions of juice were bled off from Pinot Noir ferments and fermented with the Kina juice.
The fermentation was controlled to give a dry style and the wine was left on yeast lees briefly prior to stabilising. Analysis at August bottling was 3.57pH, 6.2gL TA, 3.9gL RS, and 13.5% Alcohol
