Luscious, sensual and silken.
A perfumed, lifted nose opens to this smooth and sinewy wine; the palate is all wild ferment complexities, including ginger crunch and chilled butter. The natural acidity is beautifully packaged in fruit notes of quince, winter cole pears and green melon.
This wine is a total experience – the elements of fruit, phenolics and acidity are singing in concord – no note jars, no instrument is overly loud. Delicious.
Cellar for 2- 5 years or drink today with just about anything.
Technical
The older Mission clone vines were joined for the first time by new plantings of 2/15 and 7A, hand harvested in mid April at around 23 Brix, 3.3pH and 6.2gL TA. The fruit was whole bunch pressed on a prolonged gentle cycle and fermented with indigenous yeast, the older Mission clone in puncheons, the newer clones in tank. A long (37 days) complex wild yeast ferment took place and was stopped by chilling when the wine tasted in balance. The wine was racked and left on light lees until filtered and bottled in December 2009 at 3.22pH, 5.5gL TA, 14gL RS, and 13% Alcohol.
