Love this Rosé……a wine to tickle the buds of the most exhausted palate.

Pretty pale apricot/salmon pink colour with an intriguing nose.

Is it lavender or oregano… white chocolate, definitely roses, strawberries and cream? Crushed bed berries and rosewater?
And perhaps watermelon on the finish.

The mouth feel is fresh and lively with a fine, firm structure.

Just a swish of sweetness to round the palate and a very classy, thirst-quenching persistent finish.

This is a wine for sunset – tapas on the terrace.

It is extremely food friendly – enough oomph to handle salmon and lamb but also perfect served chilled with an oozy cheese and fresh crusty sourdough.

The analysis at harvest was 22.6 Brix, 3.56pH and 6.6gL TA.

The grapes were de-stemmed to tank to soak overnight to extract colour and flavour. The juice was then drained off to a fermenter. The fermentation was controlled to give an even fermentation rate and the wine was left on yeast lees prior to stabilising. The wine was stabilised for heat and cold, filtered and bottled on 3/9/09.

Analysis at bottling  3.5pH,  6.1gL Total Acidity, 5.8gL Residual Sugar, and 13%v/v Alcohol
